Instructions:
- Cut all vegetables into large pieces.
- Place them in a baking dish and drizzle with olive oil.
- Sprinkle with salt and oregano and mix.
- Bake at 200 degrees for about 35 minutes, until tender and golden brown.
- Remove the baking dish and serve on plates.
- Add a spoonful of HOT lyutenitsa on top of each serving.
